This delicious, tangy seasoning, combined with our grass fed pork is perfect with fresh summer produce, or hearty comfort foods like baked potatoes.


  • 1 whole CATHIS Farm finished Pork Loin
  • 1 tbsp. each lemon, lime & mandarin orange juice
  • 1 tbsp. olive oil
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. pepper

Preheat oven to 400.

Pat the loin dry with paper towels and let rest at room temp in a lightly oiled, shallow glass baking dish while mixing the other ingredients together into a paste.

Pierce the loin with a fork about 10 times on each side and then rub the citrus paste well into the loin.

Bake for 25-30 minutes.

Remove and let rest for 10 minutes before slicing into 1/2″ to 1″ pieces. Spoon drippings over sliced meat before serving.

The leftover drippings are an excellent substitute for butter or sour cream on a baked potato.
