You might be wondering “what is bone marrow butter?!”
Bone marrow is the soft inner section of beef bones. It may seem solid, but with a little heat, it melts and creates a very creamy texture, very similar to that of butter. In fact, once cooked, it tastes similar to butter as well, but with a sweet, almost nutty flavor.
Around the world, beef bone marrow has been used as soup bases, on its own, and as an ingredient. Most uses find it in soups and stocks. It’s why our pastured beef bone broth and our whole chicken bone broth recipe are so delicious.
While it is considered a delicacy in many parts of the world, bone marrow has a few key health features, including glycine, glucosamine, and linoleic acid, which have been shown to improve skin health, decrease inflammation, and improve joint function. It also has easily digestible forms of phosphorous, calcium, iron, and zinc.
This recipe is an easy way to include bone marrow (and its health benefits) in your daily diet.
Ingredients:
- 8 of our grass fed, pasture raised beef marrow bones
- 1/2 of room temperature butter
or for a paleo, keto friendly option, 2 tbsp avocado oil and 1/4 cup of bacon fat or lard - a sprinkle of salt (we like sea salt)
- flavor your way:
1/4 tsp of your favorite herb (ie, rosemary, thyme, parsley)
1/4 tsp of roasted garlic (or to taste)
1/4 tsp of lemon juice
Pre-heat your oven to 425° and line a baking sheet with parchment paper.
After defrosting, place your marrow bones on the lined baking sheet.
Bake at 425° for 15 – 20 minutes until the marrow in bone is soft and bubbly – you can insert a skewer or tooth pick to test texture.
After cooling, use a spoon to place the soft marrow centers into a food processor, and add the rest of the ingredients.
Blend until a soft, creamy texture forms and it’s well mixed.
How to use it:
