Cut from the shoulder of our forest-raised pigs, these boneless ~1" cubes are well-marbled, affordable, and built for slow cooking. The shoulder is one of the best cuts on the animal for this purpose: the marbling breaks down gradually over low heat, leaving the meat tender and the broth rich.

Vacuum sealed & frozen.

Drop them in a pot with stock, root vegetables, and whatever herbs you have on hand. They're ideal for a classic stew, a slow cooker braise, or a pork chile verde.
