To create a rich and flavorful stock using turkey frames, start by roasting the turkey frames in the oven at 400°F until they are nicely browned; this enhances the depth of flavor in your stock. Transfer the roasted backs to a large stockpot. Cover with cold water, add a mix of roughly chopped onions, carrots, celery, and a few sprigs of herbs like thyme and parsley. Simmer gently for 3-4 hours, skimming any foam that rises to the top, then strain the stock to use as a powerful base for soups, gravies, or sauces. Optional: include chicken parts for an even richer stock.
