A triangle-shaped cut from the sirloin primal, the Coulotte (also known as Picanha or Top Sirloin Cap) is a juicy, savory roast with a loyal following. It does beautifully roasted in the oven or smoked low and slow on the grill, where that fat bastes the meat and builds big flavor. Slice it thin and enjoy one of the most underrated beef cuts. Our beef is 100% grass-fed and grass-finished.
